This oven-baked rice pudding cooks to be incredibly creamy and has a subtle hint of vanilla. It’s the perfect sweet comfort food to enjoy after a fulfilling dinner.

One of the best things about this recipe is that you will only need five straightforward ingredients that you’re likely to already have in the house. You can swap the short-grain rice for long grain without making a massive difference to the end result.

The only downside to this recipe is that it will need a fair bit of time in the oven, but will prevent the need to constantly stir if you were to do it over the stove. The upside is that it only takes a few minutes to quickly prepare before you can get it baking in the oven.

You will find that this dish is perfect just by itself, but if you’re looking for something to go with it, then ice-cream works well. The hot pudding with the cold ice-cream makes this dish incredible. You can also add walnuts, raisins, and other extra ingredients to help change the pudding more to your liking.

Rice Pudding Variations

There are so many flavor combinations that you can do with rice pudding. I will quickly go through some of the most popular variations below.

Adding some cocoa powder in with the milk is an easy way to turn this into a chocolate rice pudding. For an even more luxurious chocolate experience, you can add about half a cup of chocolate chips after you have removed it from the oven.

Creamy Eggless Rice Pudding

Raisins are a common addition to rice pudding and are super easy to add. I would add roughly a quarter of a cup at the same time you add the rice. It’s the perfect addition if you love raisins.

Other fruits can be used instead of raisins. For example, chopped dates, dried cranberries, dried apricots, and so much more will work nicely in this pudding. Feel free to get a little creative.

You can make this dairy-free by using different types of milk, such as almond milk, coconut milk, or even soy milk.

Ingredients

  • ½ cup short grain rice
  • 4 cups milk
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1 cinnamon stick

Instructions

  1. Preheat an oven to 150°C (300°F).
  2. Lightly butter a deep 8Ă—8 ovenproof dish or similar.
  3. Add the sugar, rice, vanilla, cinnamon, and milk to the dish. Mix slightly.
  4. Place in the oven and bake for 1 & ½ hours.
  5. Serve & Enjoy.

Recipe Tips

  • You can swap the cinnamon stick for ground cinnamon. You will find that two teaspoons of ground cinnamon should be more than enough to get the same amount of flavor that you would from one stick. For a different flavor, you can swap the vanilla out for some rosewater extract instead. This extract will give a very fragrant, flora rose flavor to the rice pudding. Certainly worth giving a try.
  • You can add other ingredients such as raisins or dried cranberries to the pudding. You can either add these at the end or the start of cooking. Personally, I would add them at the beginning, so the flavors infuse with the rest of the dish.
  • Replace the milk with something like almond milk, coconut milk, or soy milk for a dairy-free rice pudding.

You can also make rice pudding in a slow cooker, which is just as easy as this recipe. Both methods are so much easier than doing it on the stove. However, as I mentioned above, they’re lengthy in cooking times but incredibly easy to prepare.

    I made this using half and half. Cooked for 1 1/2 hours. Rice was done but way to much liquid. Seems like it needed more rice. Only 1/2 cup of rice for 4 cups of milk. Favor was very good.

    I’m 74 now but copied what my mother used to do when she did a rice pudding. I did the same for my children when they were young and that was to put grated nutmeg on the rice before putting it in the oven. It was delicious.
